Low sugar kombucha finishes fermentation with most cane sugar consumed—commercial labels under about five grams per serving often reflect longer ferments or dilution, but always read the panel. Home brewers extend first ferment until taste is tart, then limit juice in second ferment.
“Low sugar” does not mean zero alcohol or caffeine.
