An overnight legume soak softens dried beans for faster, even cooking—discard soak water, then boil or pressure-cook until fully tender.
An overnight legume soak starts before bed: rinse dried beans, cover with two to three inches of cold water, and refrigerate if the kitchen is hot. By morning, beans swell and cook faster with more even texture.
Discard soak water, then simmer or pressure-cook until tender—never eat raw kidney beans.
