The quick soak beans method boils rinsed dried beans one minute, rests covered off heat sixty minutes, then drains and cooks in fresh water—useful when you forgot an overnight soak. It shortens total kitchen time but may be slightly less effective for gas reduction than a long cold soak for sensitive guts.
Kidney and cannellini still need a full tender boil after the quick soak.
